Chili with Tortilla Chips
Serves 3.
Ingredients
- 2 onion, chopped
- 2 red bell pepper, chopped
- 2 green bell pepper, chopped
- 2 can red kindey beans
- 1 can diced tomatoes
- hot pepper flakes
- ground cumin
- ground coriander
- 1 bag corn chips
Directions

Cook the onions for about 5 minutes, then stir in the bell peppers, season to taste with the spices and cook for 10 more minutes.

Add the kidney beans, cook 1 minute, then pour the tomatoes. Stir, then let simmer for a while, 2-3 hours for an ideal flavour. While simmering, taste a couple of times and adjust the seasoning.

Serve with the chips.
