Sweet Potato Waffles with Tahini Sauce

Waffles
- 1 large sweet potato (~350g), peeled and grated
- 350g flour
- 30g sugar
- 1 pinch salt
- 5g dry yeast
- 100g oil
- 300ml water
Tahini Sauce
- 4 tbsp tahini
- 1/2 lemon, juiced
- 1 pinch salt
- 1 pinch cumin
Directions

In a bowl, combine the ingredients for the waffles, mixing with a wooden spoon.

Let the batter rise for 1 hour in a warm spot.

Pre-heat the waffle iron, then apply some oil to both sides.

Scoop ~2 tbsp batter per waffle, and let them cook for ~4 minutes, until brown and crispy.

Combine the sauce ingredients, and serve with the waffles.
Notes
- The waffles freeze very well, and can be re-heated in a toaster.
