Tahini Cookies

- 125g margarine, room temperature, cut into chunks
- 100g tahini
- 1 tsp vanilla extract
- 112g cassonade (soft brown sugar)
- 90g sugar
- 50ml aquafaba
- 210g flour
- 3/4 tsp sodium bicarbonate
- 1/2 tsp salt
- 150g chocolate chips
Directions

In a bowl, mix together the margarine, tahini, vanilla extract and sugars, then incorporate the aquafaba.

In a separate bowl, combine the flour, sodium bicarbonate and salt, then fold them into the wet ingredients.

Finish by mixing the chocolate chips into the batter.

Chill the dough in the fridge overnight.

Preheat the oven to 180 C.

Split the dough into rough balls and spread them on a baking sheet.

Bake in the oven for 15 minutes.
